Baked Quinoa Black Bean Falafel
Ingredients #
- 1 cup cooked and completely cooled quinoa (1/3 cup dry)
- 1 15-ounce can black beans, rinsed, drained, dried
- 1/4 cup pumpkin seeds
- 5 cloves garlic
- 1/2 tsp salt
- 1 tsp cumin
- 1/2 tsp coriander
- 2 Tbsp tomato paste
- 2 Tbsp coconut aminos
- 1 tsp nutritional yeast
Directions #
- Prepare quinoa and let completely cool
- Preheat oven to 350
- Add rinsed, dried black beans to parchment-lined baking sheet and bake for 15 minutes
- Increase oven to 375
- Add black beans to a food processor along with pumpkin seeds and garlic and pulse into a loose meal
- Add remaining ingredients and pulse into a dough
- Scoop out 1 1/2 Tbsp amounts and gently form into small discs and add to baking sheet
- Bake for 15 minutes, then flip and cook for 10-15 more minutes
- Serve in pitas with cucumbers and hummus dressing
