Brussels Sprouts and Quinoa Pilaf
Ingredients #
- 1 pound shredded brussels Sprouts
- 1 shallot chopped or 1/4 cup yellow onion
- 1 glove garlic, minced
- 1 Tbsp olive oil
- 2 tsp lemon juice
- 1/2 tsp curry powder
- pinch of salt
- 1/2 cup chives
- 1/4 cup raisins
- 1 1/2 cup cooked quinoa (2/3 cup quinoa, 1 1/3 cup water)
Directions #
- Preheat oven to 425
- Combine sprouts, shallot, garlic, oil, lemon juice, curry powder and salt in a baking dish
- Cook for 20 minutes
- Let sprouts cool for a bit then add quinoa, chives and raisins
