Cauliflower Fajitas

Ingredients #

• 1 large head cauliflower, cut into bite size florets
• 2 red peppers, sliced
• 2 green peppers, sliced
• 1 medium onion, sliced
• 2-4 Tbsp olive oil
• Tortillas
• Taco seasoning OR
  • 1 Tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 tsp salt

Directions #

• Preheat oven to 425
• Line pan with parchment paper or spray
• Mix spices in bowl
• Combine everything in a large bowl
• Add mixture to pan(s) and cook for 20-25 minutes
• Serve with tortillas
