Cauliflower Rice Bowl
Ingredients #
Cauliflower rice #
- 1 Tbsp olive oil
- 3 cloves garlic, mined
- 1/4 cup diced onion
- 1 medium head cauliflower grated
- pinch of salt
- 3 Tbsp lime juice
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/3 cup salsa
- 1/4 cup fresh cilantro
Peppers/Beans #
- 1 Tbsp olive oil
- 1 medium pepper sliced lengthwise
- 1/2 onion sliced
- 15 oz black beans, drained and rinsed
- 1/2 tsp cumin
- 1/2 tsp chili powder
- salt to taste
Directions #
- Heat a large skillet over medium heat with some oil
- Add garlic, onion and some salt, sauté for 1 minute
- Add rice and cook for 2-4 minutes
- Transfer to mixing bowl, add lime juice, cumin, chili powder, salsa and cilantro
- Add remaining ingredients to pan you just used, sauté for 4-5 minutes
- Serve pepper mixture over rice with salsa, guacamole, or any toppings of your choice
