Cheesy Chili Mac
Ingredients #
- 1 Tbsp olive oil
- 1 onion
- 2 cloves garlic, minced
- 2 Tbsp flour
- 2 Tbsp chili powder
- 1 15oz can diced tomatoes
- 1 15oz can tomato sauce
- 1 15oz can black beans
- 1 15oz can pinto beans
- 1 cup frozen corn kernels
- 2 cups vegetable broth
- 2 cups uncooked macaroni noodles
- 1 cup shredded sharp cheddar
Directions #
- Sauté onion and garlic with olive oil in the bottom of a large pot for 2-3 minutes
- Add flour and chili powder to the pot, stir for about 2 minutes
- Drain and rinse all the beans
- Add tomatoes, tomato sauce, beans, corn, and vegetable broth to pot
- Add uncooked macaroni noodles and stir to combine
- Place lid on pot, turn the heat up to medium high, and let the pot come up to a boil, stirring every other minute, so the noodle don't stick
- When boiling, turn the heat down to low and simmer for 12-15 minutes stirring frequently
- Once pasta is cooked add cheese
