Chickpea Bolognese
Ingredients #
Chickpeas #
- 15 oz chickpeas, rinsed and dried
- 1 Tbsp olive oil
- 1 Tbsp dried oregano
- 1 pinch sea salt
- 2 tsp garlic powder
- 3 Tbsp bread crumbs
- 1 Tbsp parmesan cheese
Sauce #
- 1 Tbsp olive oil
- 3 cloves minced garlic
- 1/4 cup carrots finely diced
- 1 15 oz can tomato sauce
- 1 Tbsp dried oregano
- 1 Tbsp parmesan cheese
- 1 Tbsp sugar or maple syrup
Directions #
- Preheat oven to 375
- Add all chickpea ingredients to a bowl
- Cook for 20-25 minutes, then remove and set aside
- Heat skillet and add oil, garlic, and carrots, sauté for 3 minutes
- Add tomato sauce, oregano and cheese, bring to a boil, once boiling reduce hit and continue cooking to thicken
- Add sweetener
- Add 3/4 of the baked chickpeas to sauce
