French Toast Casserole
Ingredients #
French toast #
- 14 oz bread (roughly 2 french loaves)
- 1 c. pumpkin puree
- 4 flax eggs (4 Tbsp flax + 12 Tbsp water)
- 1/2 c coconut milk
- 1 c almond mlik
- 1/4 c maple syrup
- 1 tsp cinnamon
- pinch salt
- 1 Tbsp vanilla extract
Topping #
- 7 Tbsp almond flour
- 3 Tbsp maple syrup
- 1/2 Tbsp melted butter
- 3/4 c pecans
Directions #
- tear up bread and add to 1.5 qt casserole dish
- Mix other french toast ingredients
- Pour over bread, press down so all bread is soaked
- Cover with saran wrap and refrigerate overnight
- Mix topping and spread over top of casserole
- Cook at 350 for 50-60 minutes
