Jackfruit taquitos
Ingredients #
- 20 oz canned jackfruit
- 2 tsp oil
- 1/2 cup chopped onions
- 1 cup water
- 1 tsp coconut aminos
- 2 Tbsp taco seasoning
Directions #
- Preheat oven to 425
- Rinse and cut jackfruit into "shredded beef" like pieces
- Heat oil in skillet
- Add jackfruit and cook for a few minutes
- Add onion and sauté for a few minutes
- Add taco seasoning, water and aminos
- Cook for about 10 minutes
- Add jackfruit to tortillas and roll them into little taquitos
- Add to pan with seam down
- Spray/brush tops with oil
- Cook for 15 minutes
- Dip in guacamole, salsa, etc
