One Pot Vegan Hamburger Helper
Ingredients #
- 1 tsp olive oil
- 1 medium yellow onion, diced
- 4 cloves garlic, finely minced
- 1 lb. vegan chorizo
- 2 Tbsp cornstarch
- 2 Tbsp chili powder
- 2 tsp oregano
- 2 tsp paprika
- 1 tsp salt
- 3 cup almond milk
- 2 cup vegan beef broth
- 1 cup tomato sauce
- 4 cups rotini pasta (or pasta of your choice)
Directions #
- Sauté onions and garlic
- Add in chorizo and cook for about 5 minutes
- In a small bowl, mix together the cornstarch, oregano, chili powder, paprika, and salt and add to pan
- Mix in the almond milk, broth, tomato sauce, and pasta, and bring to a boil
- Cover with a lid, reduce the heat to a simmer and cook for 10 to 12 minutes, or until the pasta is al dente
- Remove from heat
