Overnight French Toast Casserole
Ingredients #
French Toast #
- 14 oz french bread
- 1 cup pumpkin puree
- 4 flax eggs (4 Tbsp flax + 12 Tbsp water)
- 1/2 cup coconut milk
- 1 cup almond milk
- 1/4 cup maple syrup
- 1 tsp cinnamon
- 1 Tbsp vanilla extract
Pecan topping #
- 7 Tbsp almond flour
- 3 Tbsp maple syrup
- 1/2 Tbsp melted butter
- 3/4 cup pecans, coarsely chopped
Directions #
- Make flax eggs and let them sit for ~10 minutes
- Tear bread into 1 inch pieces and place in casserole dish
- Mix together pumpkin, coconut milk, almond milk, maple syrup, cinnamon, vanilla, and flax eggs
- Pour over bread and press down so all of bread is covered
- Place in fridge overnight or at least 6 hours
- Preheat over to 350
- Mix pecan topping ingredients together and spread over casserole
- Bake 45 to 60 minutes
