Roasted plantain and black bean vegan bowl

Plantains
- 4 large ripe plantains
- 1.5 Tbsp coconut oil

Rice and beans
- 1 cup dry rice
- 1 can black beans
- Optional
- salt
- cumin
- chili powder

Slaw
- 3 cups finely shredded cabbage
- 1 cup finely chopped green onion

Toppings (optional)
- Guacamole
- Salsa
Directions #
- Prepare rice
- Cut plantains into 1/4" thick slices
- Add plantains to skillet with coconut oil and fry for about 15 minutes, flipping throughout
- Add beans to skillet with optional spices and heat until bubbling, reduce to simmer
- Toss cabbage and onions to make slaw
- When all is cooked layer rice, beans, plantains, slaw and any other toppings
