Southwest Vegetable Casserole
Ingredients #
- 2 Tbsp olive oil
- 1 cup chopped onion
- 1 cup chopped green pepper
- 1 cup corn, frozen or can
- 1 Tbsp cumin
- 1/4 tsp salt
- 1 large sweet potato
- 15 oz can black beans, rinsed/drained
- 14.5 oz diced tomatoes
- 1/3 cup BBQ sauce of choice
- crushed tortilla chips
Directions #
- Preheat oven to 350
- In a large skillet heat oil
- Add onion, pepper, corn and sweet potato and cook for 10 minutes
- Add cumin and salt and cook for 1 minute
- Add remaining ingredients except chips and stir
- Transfer to glass dish
- Bake covered, 30 minutes
- Remove cover, add crushed chips and cook 5 more minutes
