Sun-Dried Tomato Pesto Pasta
Ingredients #
- 10 oz pasta
- 3 oz sun-dried tomatoes
- 1/4 cup olive oil (not needed if tomatoes are in oil)
- 1 cup fresh basil
- 4 cloves garlic, mined
- 2 Tbsp vegan parmesan
Directions #
- Cook pasta according to package instructions
- Add remaining ingredients to food processor and puree
- If it's a little thick add some pasta water
- Add drained pasta back to pot and add pesto
- toss to coat
