Sweet potato black bean enchiladas
Ingredients #
- roasted sweet potatoes
- 2 medium onions, diced
- 10 cloves of garlic, minced
- 1 15oz can black beans, drained
- 1 Tbsp lime juice
- 1 Tbsp cumin
- 2 tsp chili powder
- 1/2 tsp salt
- 1 1/2 cups cheese of your choice
- 16 oz enchilada sauce
- 8-10 tortillas
Directions #
- Make sweet potatoes
- Preheat oven to 350 degrees
- Add garlic and onion to a large skillet with 1 tsp of olive oil
- Sauté 10 minutes
- Add to beans, sweet potatoes, lime juice, cumin, chili powder, and salt to skillet
- Assemble enchiladas using the tortillas
- Place enchilada in a 9x13 glass dish and cover with enchilada sauce
- Bake for 20-25 minutes
