Sweet Potato Gnocchi with Sage Butter
Ingredients #
- 2 large sweet potatoes (2 pounds)
- 1 tsp salt
- 1/2 tsp ground nutmeg
- 1/2 tsp ground pepper
- 2 1/2 - 3 1/2 cups flour
- 1/2 cup butter
- 1/2 cup fresh sage leaves
Directions #
- Bake sweet potatoes - 425 for 45 minutes or in microwave
- Cut the potatoes in half lengthwise
- Scoop out the flesh into a bowl
- Thoroughly mash, while they are still warm and let cool
- Add salt, nutmeg, and pepper to potatoes
- Add flour, 1/2 cup at a time, mixing well to combine
- Once a soft, slightly sticky dough has formed divide the dough into 6 pieces
- Liberally flour the work surface
- Roll each portion of dough into 1/2 in diameter ropes
- Cut each roll into 1 inch pieces
- Fill a saucepan with water and boil
- Also add butter and sage in a large skillet
- When water is boiling, reduce the heat and add gnocchi, ~20 at a time
- Once they float add to skillet
- Cook on each side for 1 to 2 minutes
