Sweet Potato Gnocchi with Sage Butter

Ingredients #

• 2 large sweet potatoes (2 pounds)
• 1 tsp salt
• 1/2 tsp ground nutmeg
• 1/2 tsp ground pepper
• 2 1/2 - 3 1/2 cups flour
• 1/2 cup butter
• 1/2 cup fresh sage leaves

Directions #

• Bake sweet potatoes - 425 for 45 minutes or in microwave
• Cut the potatoes in half lengthwise
• Scoop out the flesh into a bowl
• Thoroughly mash, while they are still warm and let cool
• Add salt, nutmeg, and pepper to potatoes
• Add flour, 1/2 cup at a time, mixing well to combine
• Once a soft, slightly sticky dough has formed divide the dough into 6 pieces
• Liberally flour the work surface
• Roll each portion of dough into 1/2 in diameter ropes
• Cut each roll into 1 inch pieces
• Fill a saucepan with water and boil
• Also add butter and sage in a large skillet
• When water is boiling, reduce the heat and add gnocchi, ~20 at a time
• Once they float add to skillet
• Cook on each side for 1 to 2 minutes
