Sweet potato peanut burgers
Ingredients #
- 1/2 cup peanuts
- 1/4 cup oats
- 3 cloves garlic
- 1 tsp ginger
- 1 15oz can chickpeas, drained
- 2 Tbsp packed cilantro
- 1 tsp coconut aminos
- 2 tsp rice vinegar
- 2 tsp sesame oil
- 3/4 tsp salt
- 2 Tbsp flax seed
- 1/2 cup sweet potato puree
- breadcrumbs
Directions #
- Preheat oven to 400
- Blend peanuts, oats, garlic, and ginger in a food processor
- Add chickpeas and cilantro and blend again
- Transfer to bowl
- Add aminos, vinegar, oil, salt, flax seed and sweet potato to bowl and mix well
- Add oat flour or chickpea flour if too wet
- Form into patties and place on baking sheet
- Bake for 20 minutes, flip, and bake for another 10 minutes
