Sweet potato tacos

Ingredients #

• tortillas
• 2-3 sweet potatoes, cubed in 1/2" chunks
• 8 oz mushrooms
• 2 Tbsp olive oil
• 2 tsp paprika
• 2 tsp cumin
• 2 tsp chili powder
• 2 tsp onion powder
• 2 tsp garlic powder
• 2 tsp salt
• 1 tsp pepper
• 1 16 oz can black beans

Directions #

• Preheat oven to 425
• Toss everything, except beans, in a bowl
• Add to a baking sheet with a silicone mat
• Bake for 30 minutes, stirring every 10 minutes or so
• Add black beans and cook for 5 more minutes
• Serve with tortillas
