Tofu po'boy
Ingredients #
Tofu #
- 1 pound extra firm tofu, drained and pressed
- 1 c almond milk (only really need 1/3 c, make sure to decrease corn starch too)
- 2 Tbsp corn starch
- 1 c corn meal
- 2 Tbsp chili powder
- 1 tsp cumin
- 1 tsp salt
Crispy Cole Slaw #
- 1/3 c vegan mayo
- 1/2 tsp dried dill
- 3 c finely shredded cabbage
- 1 carrot, finely shredded
- 1/2 c finely diced bread and butter pickles
Directions #
- Mix milk and corn starch
- Combine all dry ingredients
- Cut tofu into triangles (3 slices, then rectangles, then triangles, then triangles again)
- Dip tofu in milk mix
- Drip into dry mix
Bake 350 for 24 minutes
