Vegan Baked Ziti
Ingredients #
- Cashew cheese
- 1 1/2 cups raw cashews
- 3/4 cup water
- 2-3 Tbsp lemon juice
- 4 Tbsp nutritional yeast
- 1 garlic clove
- 1/2 tsp onion powder
- 1 tsp salt
- The rest
- 1 pound ziti noodles, cooked
- 25 oz marinara sauce
- vegan mozzarella cheese
Directions #
- Preheat oven to 375
- Soak cashews in boiling water for at least 5 minutes
- Drain the cashews and add to food processor with water, lemon, yeast, garlic, onion powder and salt
- Blend until smooth
- Combine marinara and cooked pasta
- Add to 9 x 13 glass dish
- Add cashew cheese and stir gently
- Add mozzarella cheese
- Bake, uncovered, for 25 minutes
