Vegan Chickpea Stir Fry Bowl
Ingredients #
- 1 large onion, diced
- 8 cloves of garlic, minces
- 2 Tbsp fresh ginger
- 2 8oz cans of water chestnuts, drained
- 1 8oz can baby corn, drained
- 10 oz frozen broccoli
- 2 15oz cans of chickpeas, drained
- olive oil
- brown rice
- homemade stir fry size
Directions #
- Preheat over to 450
- Place chickpeas on baking sheet and toss with 1/8 cup of olive oil
- Roast for 15-18 minutes, shaking about 10 minutes in
- Add onion, garlic, ginger, chestnuts, and corn to a bowl and toss
- Heat in a skillet for 8-10 minutes
- Make stir fry sauce
- Add sauce and broccoli to skillet, cook until broccoli is done
- Add chickpeas to skillet
- Serve over brown rice
