Vegan Chickpea Stir Fry Bowl

Ingredients #

• 1 large onion, diced
• 8 cloves of garlic, minces
• 2 Tbsp fresh ginger
• 2 8oz cans of water chestnuts, drained
• 1 8oz can baby corn, drained
• 10 oz frozen broccoli
• 2 15oz cans of chickpeas, drained
• olive oil
• brown rice
• homemade stir fry size

Directions #

• Preheat over to 450
• Place chickpeas on baking sheet and toss with 1/8 cup of olive oil
• Roast for 15-18 minutes, shaking about 10 minutes in
• Add onion, garlic, ginger, chestnuts, and corn to a bowl and toss
• Heat in a skillet for 8-10 minutes
• Make stir fry sauce
• Add sauce and broccoli to skillet, cook until broccoli is done
• Add chickpeas to skillet
• Serve over brown rice
