Vegan Ranch Chicken Nuggets
Ingredients #
- 1 package super firm tofu, cubed
- 1 Tbsp soy sauce
- 1 1/2 cups vegan broth
- 1 clove garlic, smashed
- 2 Tbsp oil
- 1 cup vegan plain unsweetened yogurt
- 2 cups vegan cornflakes, smashed into crumbs or run through a food processor
- 1/4 cup nutritional yeast
- 1 tsp dried dill
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
Directions #
- Combine soy sauce, broth, garlic, and oil in a dish or bowl then add tofu to marinate for 20 minutes
- Preheat oven to 375
- Add vegan yogurt to bowl
- Combine cornflake crumbs, nutritional yeast, dill, garlic powder, onion powder, and salt
- Toss tofu in yogurt then toss in cornflake mixture, add to pan
- Spray battered tofu with oil and cook for 40 minutes, flipping halfway through
