Spaghetti and Meatball Soup
Ingredients #
- 1 Tbsp olive oil
- 6 cloves garlic, mined
- 1/2 yellow onion, diced
- 6 cups vegetables broth
- 1 can 28 oz crushed tomatoes
- 1 Tbsp balsamic vinegar
- 1 tsp dried basil
- 1 tsp dried oregano
- 8 oz spaghetti
Directions #
- Heat oil in a Dutch oven then add garlic and onion and sauté for 5 minutes
- Add all remaining ingredients except pasta and bring to a simmer
- Reduce heat and add spaghetti
- Simmer until spaghetti is cooked through
- Add meatballs to soup
