Vegan Taco Casserole
Ingredients #
- 1 medium onion, chopped
- 7 cloves garlic, chopped
- 1 1/2 tsp chili powder
- 2 tsp cumin
- 1 1/2 tsp basil
- 1/2 tsp cayenne
- 1/4 tsp smoked paprika
- 1/2 tsp salt
- 2 Tbsp olive oil
- 1 15 oz can black beans, drained
- 1 15 oz can great northern beans, drained
- 1/2 cup nutritional yeast
- 2 1/2 cups chunky salsa
- 14 oz yellow tortilla chips
- Optional
Directions #
- Preheat oven to 400
- Combine onion, garlic, oil, chili powder, cumin, basil, cayenne, paprika, and salt in a skillet and cook for 5-10 minutes
- Add beans and stir well
- Spray a 9 x 13 glass baking dish
- Add a layer of chips to cover bottom of pan
- Add half the bean mixture to the chips
- Add 1/4 cup of nutritional yeast
- Add half of salsa
- Add another layer of chips then beans, nutritional yeast, and salsa
- Cover with a layer of crushed chips
- Cook for 25-30 minutes
- Top with lime juice and green onions
